This Week’s Tips for Success
Monday: Cheesy Hamburger Skillet
Meal Prep Tip: Brown the beef and onion ahead of time and store it in the fridge, then dinner is just pasta, sauce, and cheese away when you’re ready to eat.
Customization: Swap in ground turkey, or stir in a can of diced tomatoes with green chilies for a little kick.
Tuesday: Easy Chicken Pot Pie
Meal Prep Tip: This is a great one to use up rotisserie chicken. Make the filling a day ahead and store it in the fridge, then fill and bake the crust fresh when you’re ready.
Wednesday: Creamy Potato Soup
Meal Prep Tip: The soup base can be made ahead and reheated. Just wait to stir in the sour cream, cheese, and bacon until right before serving so it all stays fresh and creamy.
Customization: Skip the bacon and sauté the onions in butter for a meatless version, or add a little smoked paprika.
Thursday: Fontina Pork Chops with Mushroom Sauce
Meal Prep Tip: This one is best made fresh since the drippings from searing the chops build the flavor in the sauce. Chop your mushrooms and measure everything else ahead so dinner still moves fast.
Customization: No Marsala on hand? Sherry or a splash of balsamic vinegar with chicken broth works too, and provolone or gouda are great swaps for the fontina.
Friday: Easy Baked Stuffed Shells
Meal Prep Tip: Assemble the shells completely a day ahead, cover, and refrigerate, then just bake when you’re ready. This one is also freezer friendly if you want to stash a batch for later.
Customization: Add spinach to the ricotta filling for extra veggies, or use a store bought marinara if you’re short on time.
Dessert: Banana Nut Muffins
Customization: Swap walnuts for pecans, or leave the nuts out entirely.
Each meal plan includes five dinner recipes the whole family will love, with a nice variety to keep things interesting. Add a side dish or salad, and you have a complete meal!
