Summer is in full swing, and honestly, the last thing any of us wants is to be standing over a hot stove trying to figure out what to make. That’s exactly why having a meal plan makes all the difference this time of year. When dinner is already decided, the whole evening feels a little more relaxed before it even starts.

This week’s lineup covers every kind of craving, from slow-cooked comfort to something quick and fresh, and even a little something special to end the week on a sweet note. Pull the plan, do a little weekend prep, and let the week take care of itself.

This Week’s Tips for Success

Monday: Mississippi Pot Roast
Meal Prep Tip: This is a true set-it-and-forget-it meal. Get it in the slow cooker in the morning, and it’s ready by dinner. Leftovers reheat beautifully, so don’t be afraid to make a big roast. Customization: Serve over mashed potatoes, egg noodles, or rice. If you like a thicker gravy, stir a cornstarch slurry into the drippings after shredding.

Tuesday: Taco Spaghetti Bake
Customization: Set out toppings like sour cream, salsa, sliced jalapeños, and diced green onions so everyone can finish their own bowl the way they like it.

Wednesday: Shrimp and Chicken Fried Rice
Meal Prep Tip: Day-old rice is the key to great fried rice. If you don’t have leftovers on hand, cook a fresh batch early in the day, spread it out on a sheet pan, and let it cool completely in the fridge before dinner.
Customization: Use all chicken or all shrimp if that’s what you have. Toss in any extra veggies in your fridge, like bell peppers, mushrooms, or zucchini.

Thursday: Stuffed Bacon Cheddar Burgers
Meal Prep Tip: Form and stuff the patties the night before and keep them covered in the fridge. Pull them out about 15 minutes before grilling so they come up to temperature evenly. These can be done on the stovetop or in the air fryer, too!
Customization: Swap cheddar for pepper jack for a little kick, or use your favorite cheese blend. These work great on a hamburger bun or lettuce-wrapped for a low-carb option.

Friday: Lemon Pepper Wings
Meal Prep Tip: Pat the wings dry and coat them in the flour mixture the night before. Let them rest uncovered in the fridge overnight for even crispier results, whether you bake or air fry them.
Customization: Drizzle with a little honey before serving for a sweet heat finish. These are great alongside coleslaw, fries, or a simple green salad.

Dessert: Strawberry Rhubarb Crumble
Customization: Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream. No rhubarb? Use all strawberries or swap in raspberries or peaches for a different fruit combo.
